This is a quick and tasty dish great for lunch or supper and the kids love them too!
4 lg. potatoes
2 lg. cans Salmon / Tuna (in oil or water) drained
1 lg. tbsp. Spice&Easy Thai Spice Blend
1 cup chopped coriander
1 cup chopped spring onion
3 small ‘hot’ green chilies for extra spice (optional)
1 tsp. grated lemon zest
1 egg (to bind)
1 tbsp. plain flour, extra for dusting
Peel, cut and boil potatoes until soft. Allow to cool and mash.
Add all other ingredients to mashed potatoes, mix well to combine.
Shape into fish cakes (preferred size), dust with flour and fry in shallow pan with a little oil until golden brown.
Serve with salad and lemon wedges
